Super creamy loaded mashed potatoes! Feel free to add more or less seasoning to your taste. I made these and my husband thought they tasted like they were from a restaurant. Ingredients 2.5lbs red skin potatoes 2/3 cup milk 2/3 cup sour cream 1 ½ sticks of unsalted butter 12 pieces of crispy bacon 2 cups shredded cheddar cheese ¼ tsp onion powder ½ tsp pepper 1/2 tsp salt Directions Skin the potatoes, but leave some spots of skin on (see photo). Cut the potatoes into similar sized pieces. Boil potatoes in water until fork tender. Drain the water. Cut the butter into tablespoon sized chunks and place into a large mixing bowl. Crumble the crispy bacon and place in the bowl. Add all other ingredients except for the cheese into the bowl with the butter and bacon. Mix the ingredients with an electric hand mixer until smooth or desired consistency. While still warm fold in the cheddar cheese. If necessary re-heat the potatoes and then fold in the cheese. Can be garnished with chopped green onions, more cheese, or more bacon. Enjoy! |
